If I arrive on the 30 day exemption I'm taking it they would still need to see proof of onward travel? When you did the 13 week turnaround did the Adelaide Consulate just give you one 60 day Tourist Visa to be extended?

I've never bought a tourist visa in Australia, only at the Thai embassy in Vientiane.
I've never been asked for proof of onward travel in Thailand. Some airlines crack up if you check in in Australia if you don't have a return ticket and no visa of any kind. I had a little spat with Qantas this year until I showed them the visa.

So in your previous experience you have just entered on the 30 day exemption, then extended while over there. I'm taking it you still had a return ticket already booked for the 13 week turnaround though?

Yes, I was always on a 13 0r 6 week turnaround so it made sense. But usually I had a visa in place before I left as well but I have done what I suggested a couple of times.
You're not quite sure what's going on I know, because it's your first time, but you will be surprised how easily everything will fall into place and how helpful people are.
