I make the best of much, Problem is, it’s never the same next round.
Easy one to remember. Mash potatoes, just mash up.
Add browned onion, ( fried in olive oil ) Oregano Garlic Add milk as you go for your own desired degree of slop.
Left over, the next day. Put in fry pan Add omelette eggs, and stir, put on toast.

Please please please:
Do not add any liquid or anything until your mashed potato is fully drained and mashed - you get much better consistency as a result.

The best mashed spuds I ever ate had been boiled in their skins then peeled while still hot (ouch ouch ouch). Just the actual skin comes off and leaves that tasty underneath bit.

sweet spuds are the go here. healthier so I believe and taste much better but never thought of mashing them. Maybe Google can help.

Yes they are popular now and can be quite tasty... You cannot beat a few roast spuds or some chips with a pork chop or a nice grilled fish fillet though.

I bake them in the oven in their skins and get them out when a skewer or knife falls through the potato easily and all the sugar juices have started running out of the skin to make like a toffee. The toffee stuff is delicious (literally like toffee!) if you scrape it off the pan fast enough before it sets and the steaming sweet potato inside the skin is so sweet, moist and mushy that they are just delightful- nice on their own or topped with other favorite foods. I started cooking them like this for my bird so I was not feeding him oil and found out I like them best done this way lol They are also delicious cut into chips and lightly oiled then cooked in oven or air fryer or battered and deep fried like a potato cake (pumpkin and carrots are good done like this too)

They are street food up here, they bake them on a BBQ plate for snacks.

Splash of olive oil in a nonstick frypan. 5 minutes low heat on each side and that's my favourite lunch of the week with salad.

Further to pete57ad's excellent potato recipe I was also reminded of a potato dish that I have never cooked but have loved it whenever served it and that is scalloped potatoes. I did find this recipe though, Scalloped potatoes
